
Pumpkin Roll-Out Cookies
There are two treats that are fall-favorites in my home. In addition to Pumpkin Muffins, my girls look forward to Pumpkin Cut-Out Cookies each fall. They are fun to make–a great family project to do together–low in sugar and great-tasting. We’ve made these in our home since my girls were toddlers. I hope these become a tradition in your home too! PUMPKIN CUT-OUT COOKIES (found on familyplay.com)
3/4 cup butter (softened)
1/2 cup brown sugar
1/2 cup pumpkin-pie filling
1 egg yolk
1 tsp. vanilla
2-1/4 cups flour
1/4 tsp. ground ginger
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Pinch of salt
Preheat the oven to 375 degrees. Cream together the butter and brown sugar. When the mixture is blended, add the pumpkin-pie filling, egg yolk and vanilla. Blend thoroughly and set aside. In a separate bowl, combine the flour, cinnamon, ginger, nutmeg and salt.
Gradually add the dry ingredients to the wet ingredients and stir until mixed. Refrigerate the mixture for 30 minutes. Then roll out the dough to a thickness of about 1/8 inch. Cut into shapes using cookie cutters or make a giant jack-o-lantern shaped cookie by using your hands. Bake for 10 to 15 minutes.
